Soft Chewy Ginger Cookies

Ingredients

  • 1.5 cups butter, softened
  • 2 cups sugar
  • 2/3 cup molasses
  • 3 eggs
  • 1/2 tsp salt
  • 2 tsp ginger
  • 1 tsp clove
  • 2 tsp cinnamon
  • 3 tsp baking soda
  • 4.5 cups flour

Instructions

  1. Mix the butter and sugar in a mixer. Add the eggs and molasses and blend.

  2. Mix all dry ingredients together.

  3. Slowly add the dry ingredients and blend in the mixer until thoroughly blended.

  4. Refrigerate dough for 1-2 hours, or overnight.

  5. Preheat the oven to 350F and add parchment to a large cookie sheet.

  6. Roll the cookie dough into 1.5" balls and place, separated, on the baking sheet.

  7. Bake for 10-11 minutes, watching carefully. Make sure not to overbake.
