Low-carb Keto Strawberry Shortcake in a Jar

Strawberries are a favourite summer fruit and are easy to incorporate into a low carb diet. Today I’m sharing a delicious low carb keto friendly strawberry shortcake recipe in a jar, as well as 12 other summer strawberry recipes.

Strawberry season is nearly upon us and locally plus imported strawberries are out in full force in all of our grocery stores. These scarlet red beauties when in season are soft, sweet, juicy, and absolutely delicious. Plump and mouth-watering, strawberries are many people’s favourite berries. AND guess what?! They have some of the lowest carbs of all the berries and can fit seamlessly into a low-carb or keto diet plan. Today I’m sharing a delicious and simple to make Strawberry Loaf Cake recipe that is low carb and keto friendly as it’s made with a mix of almond and coconut flour. It’s also the perfect mix of sweet, tangy, creamy, and delicious when made into these cute little strawberry shortcakes in a jar!

Strawberries are probably my favourite fruit. I think it’s the slightly acidic and tangy flavour of even a sweet strawberry that I love. And few fruits are as delicious when paired with french vanilla ice cream or, in this case with low-carb keto friendly whipped cream. The delicious cake itself has fresh strawberries folded in which breaks up some of the heaviness of the almond flour and makes it scrumptiously moist. You could eat the loaf cake on its own or even go for a savoury twist by topping it with a slice of sharp cheddar. Or make half of the loaf into these satisfying keto friendly strawberry shortcake in a jar and save the rest for later!

You also shouldn’t rinse your strawberries under water until you are ready to cut and eat them, or it will encourage them to spoil sooner. Best when fresh, plump, and ripe – strawberries thankfully grow in every Canadian province and US state, so nearly everyone has access to locally sourced freshly grown beauties. As soon as we get our back yard into shape, I am looking forward to planting some strawberries at our new home, so we can pick and enjoy them off the vine, or in recipes like this one.

Keto Strawberry Shortcake in a Jar

A deliciously moist strawberry loaf cake forms the base for this low carb, keto friendly strawberry shortcake in a jar.

Cook Time 1 hour


Strawberry Loaf

  • 3/4 cup Lakanto Monk Fruit Sweetener
  • 4 tbsp margarine or softened butter or coconut oil
  • 1.5 cups almond flour
  • 1/3 cup coconut flour
  • 1.5 tsp vanilla extract
  • 1/4 cup 14% full fat sour cream
  • 1 pinch salt
  • 1 cup diced fresh strawberries

Low Carb Strawberry Sauce

  • 2 cups strawberries, diced
  • 2 tbsp Swerve powdered sugar (or ground up Lakanto)

Keto Whipped Cream

  • 1 cup heaving whipping cream, 33%
  • 2 tbsp Swerve powdered sugar (or ground up Lakanto)


  1. Grease your loaf pan and preheat the oven to 350 degrees.

  2. First mix the margarine and Lakanto Monk Fruit sweetener until it is fluffy and light.

  3. Slowly add the eggs, blending as you go.

  4. Then add in the vanilla and sour cream and blend until thorougly mixed.

  5. Stir in the rest of the dry ingredients and blend until mixed thorougly.

  6. Stop the mixer and add the 1 cup of diced strawberries, folding in by hand.

  7. Bake at 350 for about 50-60 minutes, keeping an eye on it to make sure it doesn't burn. It's ready when it's golden brown and firm to the touch, but the fresh strawberries may mean it's slightly soft in the middle still.

  8. Allow it to cool outside the oven for a half hour before gently removing from the pan. If you want to make the strawberry shortcakes right away, throw the loaf in the freezer for about 15 minutes to cool and set before slicing into small pieces.

  9. Place small pieces of cake in each jar and top with about 2 tbsp each of strawberry sauce and whipping cream. (see further instructions below).

I cooled the loaf cake completely and put it in the freezer for a few minutes to firm it up. I then cut the loaf into small squares and layered these in the bottom of some small canning jars. I used just over a third of the loaf to cut enough cubes for these four desserts. The rest was placed in the fridge for another day.

I cubed up strawberries in small pieces, and added 1 tbsp of Swerve powdered sugar for each cup of strawberries, allowing the mix to sit for about an hour at room temperature. I also made fresh whipped cream by beating 1 cup of whipped cream in my mixer with 2 tbsp of Swerve powdered sugar.

I topped the cake pieces with a couple of tablespoons of the fresh strawberry mix followed by a couple of tablespoons of the whipped cream. Finally, I added a small slice of strawberry as a garnish. Done!

Once the loaf cake is baked, the rest is easy peasy and can be thrown together at the last minute or made up ahead of time and chilled.
