Homemade Keto Low-Carb Eggnog (with rum!)

Do you look forward to holiday treats like spiked homemade eggnog at Christmas but you’re trying to reduce your sugar intake or eat low-carb or keto style? Then this delicious and easy keto eggnog will be the perfect drink to try this holiday season!

I can hardly believe that there are less than ten days until Christmas! And even though this year is going to look really different, there are certain things that we all look forward to each holiday season that we can still enjoy this year!  Since my husband and I have been following a low-carb keto friendly eating style for several months now, I’m working on figuring out alternative recipes for our holiday favourites. I always love a delicious rum and eggnog recipe on Christmas Eve, as well as homemade mulled wine (I’m still working on that recipe – see my original version here).  Today I’m sharing a keto-friendly low-carb eggnog that is rich and spicy, but perfectly delicious as an alternative to the sugary store-bought versions.  The spice is so nice, and top it with a little dark rum our bourbon, and you’ve got yourself a delicious holiday drink treat.

This is such a simple easy eggnog recipe for that homemade taste , and the difference between a regular and keto or low carb version of eggnog is substituting a sugar alternative as well as using whipping cream and sugar-free unsweetened almond milk as the base.

The star of the show is really the spices; the cinnamon and nutmeg truly make this recipe tasty.  Freshly ground nutmeg is much more potent than most of the nutmeg that is readily available. If you only  have ground nutmeg, like I did, then use 2 tsp. If you can find real nutmeg to grind, then you can use less as it’s potency is greatly increased when fresh.

Cinnamon is my favourite way to top off my homemade eggnog… well, cinnamon and a dash or dark rum, of course.  You could also use bourbon or spiced rum, or keep it completely virgin.  It’s such a rich and creamy holiday treat.

Keto Homemade Eggnog

Delicious rich and creamy homemade low carb keto eggnog

Ingredients

  • 2 cups whipping cream
  • 2 cups unsweetened sugar-free almond milk
  • 1/2 cup monks fruit sweetener
  • 2 cinnamon sticks
  • 2 tsp nutmet
  • 6 eggs, yolk only
  • 2 tsp vanilla
  • 1.5 oz rum to taste, added when served

Instructions

  1. Mix the whipping cream, unsweetened almond milk, cinnamon sticks, and nutmeg to a pot and heat over medium on the stove for about 8-10 minutes to infuse the flavours.

  2. Take the milk and spice mixture off the stove and let cool for a few minutes.

  3. While the egg mixture is cooling, separate the egg yolks and mix with the sweetener using a whisk. Blend for about 3-5 minutes until the sweetener is as dissolved.

  4. Using a 1/2 cup measure, add the milk mixture into the egg mixture, whisking the whole time so as to not cook and/or curdle the egg mixture. Continue until all of the milk mixture is blended with the egg/sweetener mixture.

  5. Add the whole mixture back to the pot and bring to a simmer for 8-10 minutes. It should stick to the back of your wooden spoon when heated to the right temp.

  6. Stir in the vanilla, and if you wish the rum. Otherwise add rum individually when you serve each cup of nog!

  7. Let the eggnog cool, and it will likely thicken. You may wish to add some almond milk to thin it down once it's completely cooled - I always do. I also like to top mine with a little sprinkle of cinnamon before serving. Yum!
