Grilled Zucchini with Parmesan on the BBQ

Today I’m sharing a simple and delicious summer recipe for grilled zucchini on the BBQ with parmesan and garlic. 

I’m pretty much obsessed with zucchini these days.  We eat it several times a week.  I guess it’s partly a low-carb thing, but it’s also incredibly delicious and a great side dish to so many different protein options.  During the winter we were baking zucchini a couple of times a week and adding spices and parmesan after cooking to turn this simple summer squash into a next-level side dish.  But now that grilling season has arrived, I’ve begun experimenting with this BBQ version of grilled zucchini with parmesan, and it’s even more delicious than the oven baked style. Although it’s yummy hot-off-the-grill, it’s also still very tasty when it’s cooled down.  BBQ grilled zucchini with parmesan is a great addition to your next summer meal or BBQ!

I’ve found the most success in grilling zucchini when I slice it on a long angle, so that the pieces are wide enough to grill easily on the BBQ grates without threatening to fall through them.  Criss-crossing the grill marks through the cooking method I describe in the recipe isn’t strictly necessary to achieve the flavour, but I think it adds a little something to the summery feel of this dish.

You can grate your own from a block of parmesan or buy it pre-grated from the store for convenience and speed. My youngest son loves parmesan cheese so much that he will eat chunks of it whole, right off the block.

This pairs beautifully with BBQ chicken breast, steak, or even pork loin.  We also love it with a side of Caesar Salad (I shared my favourite homemade Caesar Salad dressing recipe in this post).

This is such a family favourite that we make it on a weekly basis – though we often use the oven for it in the cooler, rainy months.  Even my boys gobble it down!

BBQ Grilled Zucchini with Parmesan

A simple and delicious summer side dish; grilled zucchini done on the BBQ and finished off with herbs and parmesan cheese.

Course Side Dish
Prep Time 5 minutes
Cook Time 10 minutes
Servings 4

Ingredients

  • 3 zucchini squash
  • 2-3 tbsp olive oil
  • 1/3 cup grated parmesan cheese
  • 1 tbsp garlic seasoning
  • 1-2 tsp dried italian herbs
  • salt and pepper to taste

Instructions

  1. Slice the zucchini on an angle into 1/4-1/2" thick slices.

  2. Toss the sliced zucchini in olive oil and lightly season with garlic powder.

  3. Heat the grill and then put on low. Put the zucchini on the grill so that the BBQ grates make lines across the slices in one direction. Lower the lid and cook for 2-3 minutes (on low temp).

  4. Turn the zucchini so that the grill marks go in the opposite direction. Lower the BBQ lid again and cook for 2 more minutes.

  5. Flip the zucchini and repeat the process, so that you end up with grill marks criss-crossing on either side and a total cooking time of about 10 minutes.

  6. Place the zucchini on a platter and immediately sprinkle the grated parmesan cheese over it. Season it with salt, pepper, and some dried Italian seasoning to finish. Serve immediately.

So good! I could literally eat this EVERY. DAY.
