Baked Brie Phyllo Cups with Walnuts & Fig Jelly

Today I’m sharing a simple and delicious holiday appetizer idea:
baked brie in phyllo cups with 
walnuts and fig jelly to top it off.  

Last July I got to go on a fabulous girls’ trip to the BC Okanagan Wine region with some close friends.  It was an awesome few days escape from the expectations of real life.  We stayed in a lovely Air’b’n’b and got to spend our days visiting local shops, touring vineyards throughout the area, and enjoying amazing meals along the way.

Several of the vineyards combined some kind of food speciality in addition to their selection of wines, and I was inspired by the foods and the flavours there.  One vineyard in Oliver, called Platinum Bench served the most amazing small loaves of fresh bread straight from the oven topped with amazing combinations of cheeses and fresh herbs.  Another vineyard we visited in the Naramata region specialized in making their own cheeses as well as wines, and the wine tasting was actually a cheese and wine pairing.  I’ve never had a better melt-in-your-mouth brie cheese in my life, and I bought a fig jelly there that was absolutely the best one I’ve ever tried.

It was this little vacation that inspired me to create the holiday appetizer that I’m sharing today.  You could enjoy these baked brie phyllo cups with walnuts and fig jelly any time of year, but there is something about the combination that feels perfectly suited for the Christmas season.

I used pre-made phyllo cups for this particular version, but I believe it would be easy enough to make your own, or even wrap up your ingredients in more of a phyllo “bite” like I did in this caramel apple phyllo bite recipe.

I cut cubes of soft brie cheese 1/2 – 3/4″ in size, removing the rind, and placed one cube in each phyllo cup.  After about 5 minutes in a 350 degree preheated oven, the cheese was beautifully melted and the phyllo cups were perfectly crispy.

Out of the oven… and topped off with a raw walnut half and a teaspoon of delicious fig jelly.

Done!

The mix of flavours is perfect together.  They’re crunchy but soft and, flaky but creamy; cheesy yet tangy; all at once.  I think they’d be perfect to bring to upcoming holiday parties and would even be lovely to serve at our Christmas Eve appetizer night.
