One of our favourite family Christmas recipes, these soft and chewy ginger cookies are the best ones I’ve ever tasted!
Do you have a cookie recipe in your family that you look forward to each holiday season? When you think of Christmas baking, it’s the one that immediately comes to mind and you can’t wait to bake some each year. My favourite for the past several years has been these delicious soft and chewy ginger cookies.
I first got this recipe from a family friend of my husband’s family a few years after we were married and it’s become our family tradition over the past several Christmas’. This year, my youngest son helped me bake these delicious morsels and I have a feeling that we’ll be needing to whip up another batch before the big day actually arrives. These are truly the best soft and chewy ginger cookies that I’ve ever had, and a wonderful addition to your family holiday baking repertoire this coming season.

The key to ensuring that these soft and chew ginger cookies stay soft and chewy and don’t become hard or dry is not over-baking them (or under baking them!).
I make sure to roll my cookie ‘balls’ to very close to a 1.5″ diameter, and then I space them out evenly so that they don’t run into each while baking. I also make sure to set my timer for 10 minutes and check them right away. They will continue to cook briefly after removing from the oven, but you also don’t want them to be too large or to under-bake them, either.
I let them cool on the countertop and then place them in a sealed container or ziplock bag to ensure they stay soft and chewy.
My boys can’t keep their hands off them! They are slightly spicy and gingery but not overwhelming in flavour at all; the spices are really beautifully balanced in these cookies. And, the recipe makes about 48 cookies!

Soft Chewy Ginger Cookies
- 1.5 cups butter, softened
- 2 cups sugar
- 2/3 cup molasses
- 3 eggs
- 1/2 tsp salt
- 2 tsp ginger
- 1 tsp clove
- 2 tsp cinnamon
- 3 tsp baking soda
- 4.5 cups flour
Mix the butter and sugar in a mixer. Add the eggs and molasses and blend.
Mix all dry ingredients together.
Slowly add the dry ingredients and blend in the mixer until thoroughly blended.
Refrigerate dough for 1-2 hours, or overnight.
Preheat the oven to 350F and add parchment to a large cookie sheet.
Roll the cookie dough into 1.5" balls and place, separated, on the baking sheet.
Bake for 10-11 minutes, watching carefully. Make sure not to overbake.
